Macaroni, spinach, & pesto heaven. |
Well, it's a good pasta sauce for a reason- a creamy, nutty topping for a former cheese addict who was fresh out of Daiya.
2 cups cooked macaroni
1 cup fresh spinach
1/2 tablespoon olive oil
1/2 teaspoon apple cider vinegar
1 cup spinach pesto (Spinach Pesto Recipe)
1/4 teaspoon salt and pepper
Bring macaroni to a boil. |
Fold in spinach. |
As it wilts add in olive oil and apple cider vinegar. |
No need to heat the cold pesto, the macaroni warms it just fine. |
Top with nutritional yeast if desired. |
Oh well.
Though my heart beats- pesto, pesto, pesto at each bite, true love will always be the Almighty Chocolate.
Homey comforting meals make me almost want to have a date, but engorging on flavors so addicting, how can sharing ever be a possibility? Not anxious for the "why is there more on your plate than mine?" battles.
The relationship with the fridge does have its romantic enjoyment.
Leftovers are like good children- to be savored and congratulated proudly.
But difference is the whole fork issue...
