Spinach Pesto Macaroni

Macaroni, spinach, & pesto heaven.
Don't know what to do with that leftover pesto?
Well, it's a good pasta sauce for a reason- a creamy, nutty topping for a former cheese addict who was fresh out of Daiya.

2 cups cooked macaroni
1 cup fresh spinach
1/2 tablespoon olive oil
1/2 teaspoon apple cider vinegar
1 cup spinach pesto (Spinach Pesto Recipe)
1/4 teaspoon salt and pepper

Bring macaroni to a boil.
Fold in spinach.
As it wilts add in olive oil and apple cider vinegar.
No need to heat the cold pesto, the macaroni warms it just fine.
Top with nutritional yeast if desired.
Move over cheese, in this luxurious palette appeasing pesto, I have found a vital replacement for your madness and plan on making it at least three times a month. Which means upping the workout factor.
Oh well.
Though my heart beats- pesto, pesto, pesto at each bite, true love will always be the Almighty Chocolate. 
Homey comforting meals make me almost want to have a date, but engorging on flavors so addicting, how can sharing ever be a possibility? Not anxious for the "why is there more on your plate than mine?" battles.
The relationship with the fridge does have its romantic enjoyment.
Leftovers are like good children- to be savored and congratulated proudly.
But difference is the whole fork issue...
